After the big snow started to melt slightly on Sunday night, I was desperate for an adventure to the grocery store to pick up last minute items for dinner. After being cooped up at home and restricted to walking to the store, there was something particularly liberating about getting 3 miles away and returning home for a creative simple night in the kitchen.
In honor of the big Panthers game that night, I put together a super simple and quick grilled buffalo chicken salad full of crunchy chopped veggies, tangy blue cheese and hot sauce and grilled chicken. And yes, I did grill the chicken in the dark with snow around.

Buffalo Chicken Salad
- 2-4 chicken breasts
- 2 tablespoons butter
- half cup, hot sauce (Franks Red Hot)
2 or 3 dashes, Worcestershire sauce
- romaine lettuce, chopped
- 1 carrot, sliced or chopped
- 1 big handful of snap peas, cut in half
- 1 big handful shredded red cabbage
- 1 cucumber, sliced
- 2 ounces gorgonzola cheese, crumbled
- your favorite ranch or blue cheese dressing
Heat hot sauce, butter and Worcestershire sauce in a small dish. Use a portion to cover the chicken, and heat the grill. Grill the chicken while basting with hot sauce.
Meanwhile, mix salad greens and veggies.
Top greens with sliced chicken. Sprinkle with cheese and toss with dressing.
