You’re a fool not to keep this delicious and easy dessert recipe on standby. I’ll admit, I was foolish not to test this recipe prior to the weekend. I made them in the afternoon in short glasses (you can get crazy creative here) and refrigerated until after dinner. I adapted the recipe with a little less sugar so the desserts were slightly tart with the combination of blackberries and greek yogurt. Light and delightful!
Get creative with various fruits and glasses. And if you’re worried about the fat from the heavy cream, remember the protein from the yogurt!
BLACKBERRY FOOLS
- 1 teaspoon vanilla paste
• 2 small 1/2 pint cartons of blackberries
• 2 tablespoons caster sugar
• Juice of 1 lemon
• 300ml whipping cream
• 200ml fat-free Greek yogurt
Place the vanilla in a pan along with all but 8 berries (just save enough for garnish), sugar and juice. Bring to the boil over a medium heat. Simmer for 3–4 mins until syrupy and the berries are soft but holding shape. Set aside to cool.
In a large bowl, whisk the cream to form peaks, fold through the yogurt and swirl through a third of the syrup. Layer the rest of the syrup and cream in dessert glasses, garnish with syrup and fresh berries.
