Seared Tuna and Blistered Tomato Salad

Around this time of year, it doesn’t take much to make a super fresh and simple meal for one. I’m constantly trying to perfect the single person healthy meal – however, it usually comes down to a piece of grilled or seared fish or meat, with fresh seasonal veggies and something salty, acidic and a nice drizzle of really good olive oil. It’s filling and great for your skin (so the magazines say). Here’s another twist on the single person dinner that includes super sweet seasonal tomatoes, my favorite salt olives and capers, delicious tuna and acid from a lemon. The blister of a tomato adds sweetness and char. So delicious!

Seared Tuna and Blistered Tomato Salad, for one

  • 1 tuna steak
  • 2 handfuls of arugula
  • 1/4 cup slices grape tomatoes and pitted olives
  • 1 tablespoon capers
  • olive oil, 1/2 lemon, salt and pepper

Lightly dress arugula with lemon juice, olive oil, salt and pepper. Make a bed of the arugula on a plate or in a bowl.

Sear tuna with salt and pepper in a super high heat skillet or grill. Cook to your desired temperature.

While the tuna rests, throw in tomatoes, olives and capers into the super hot skillet. Allow to blister for 2 minutes – this will happen quickly. Watch for the tomatoes to blister and char.

Top arugula with tuna and tomato mixture. Enjoy!
