My BFF Andrew has been on vacation in the UK for a couple of weeks and it’s left me missing our weeknight Greek salads and red wine. So, I’ve been making quick solo meals to make up the time. Lots of grilled fish and seafood is quick and easy with a dash of citrus and some fresh veggies. A Portuguese Vinho Verde wine is a great match with these flavors.
Marinate shrimp in olive oil, lemon or lime juice, a dash of hot sauce and salt/pepper for 15 or so minutes. Don’t go much over 20 minutes or the shrimp will begin to cook in the acidity of the juice. Grill the shrimp on high until pink and firm. Place on a warm corn or wheat tortilla with sour cream, more hot sauce, cilantro, sliced red onion and a handful of cole slaw mix (I actually used broccoli slaw). I threw some cheddar jack on top because it was in the fridge. It’s really as easy as that. You can make them solo or for a crowd with very little effort.
This can be adapted easily with various veggies or meats. The point is, you don’t have to lean to fast food with you can make fast delicious and healthy food in a snap at home. And, its beautiful too!
