Grilled Portobello Mushroom Based Pizzas!

While sharing a slice of butter-rich coconut cake on the 4th of July, my gym trainer presented the idea of turning my blog into a health food blog. I immediately rejected the notion. Nothing could feel more restricting to my creativity. However, I didn’t dislike the idea of coming up with some creative ideas for healthy twists. Granted, the coconut cake had over a pound of butter and cream cheese in it.

So on a stressful Monday night when all I wanted was pizza, I attempted a portobello mushroom based grilled pizza. And, it was surprisingly delicious. You could do this plenty of ways. I grilled a large portobello mushroom brushed slightly with olive oil and seasoned with salt and pepper. Once the mushroom began to soften and char, I topped the inside with store-bought marinara sauce, cheese and toppings. Close the grill and allow the cheese to melt and sauce to warm. Fresh basil and red pepper flakes were a must for me once my mini-pizza was cooked through.
