Black Bean Bowls with Chicken & Apple Salsa

When I’m looking for an entertaining shortcut I often times find the perfect solution in the deli section of the grocery store. This weekend I relied on The Fresh Market’s excellent rotisserie chickens. I bought one chicken and stretched it for a dinner party for four, plus lunch and dinner the next day. Not shabby for a seven dollar bird! I’ll share my next-day recipe for a Balsamic Chicken and Fresh Peach Salad on Friday!

This recipe for Black Bean Bowls with Chicken & Apple Salsa is great for easy entertaining. It’s also versatile for folks with dietary restrictions – as I just set everything out and let people make their own bowls. I usually top my black beans with a mixture of red wine vinegar and red onion, however the sharp tang of granny smith apple is delightful! This recipe is perfect for any season and could be even easier with a doctered-up can of black beans! Enjoy!

Black Bean Bowls with Chicken & Apple Salsa

  • Cuban Black Beans (makes enough for an army)
  • white or brown rice
  • Apple Salsa – 1 Granny Smith Apple (diced), 1/2 red onion, a handful of chopped cilantro and 1 juiced lime
  • Rotisserie Chicken, shredded
  • your favorite hot sauces
