You guys are probably totally sick of me posting recipes from Gwyneth Paltrow’s new book but it really is pretty great. I haven’t found a recipe that has let me down and they are all really healthy. So, I took a BIG risk the other day and tested her recipe for gluten and dairy free Flourless Anything Crumble.
I’m used to my family’s cobbler recipe that has two sticks of butter, eggs, white sugar and flour – so I have some serious expectations. But, I must say, this is a great alternative. The simplicity of the recipe allows the seasonal fruit flavor to come out and the crunchy quinoa flake is very interesting! I used peaches and blueberries and skipped the fresh sage.
This is a great summer dessert or even a nice healthy brunch option! Try it, you’ll like it!
Oh, and I must confess, I served it with homemade whipped cream.
Looks good! I’ve been mulling over making an apple pie this summer (I used to make a few during the summer) but it seems so…baked. This seems like a simpler, maybe even more summer-y, recipe. A super easy option for a dairy-free topping would be homemade coconut whipped cream! It’s great with baked goods (like over hot bread pudding mmm) or fresh berries or a strawberry shortcake…all delicious and all of which can be made dairy (and gluten) free! My recipe just includes coconut fat/cream, powdered sugar and vanilla. So good.
How much almond meal did you use? The recipe doesn’t mention specifics regarding this ingredient.
