Blackened Salmon Tacos with Fresh Salsa and Feta Cheese

If you are looking for a really easy, quick and delicious weeknight recipe, this might be a new stand by. I’m pretty wild about any dish that requires little time, less mess and big flavor after a long day of work and dragging my butt to the gym. This recipe is just that (plus pretty healthy!) – and it’s going into my regular line up for my tight-on-time situations! The recipe makes two healthy servings although I reheated half the next night for single people portions.

In warmer months, throw the fish on your grill the fish and enjoy the atmosphere (can you see my dream bubble appearing above my head?) Also, turn this into a salad with greens and some quinoa. Get creative with salmon – it’s really versatile!

Blackened Salmon Tacos with Fresh Salsa and Feta Cheese

  • 8 ounces, salmon
  • 1 teaspoon, ground cumin
  • 1 teaspoon, ground chipotle pepper
  • 1 teaspoon, dried oregano
  • 1/2 teaspoon, salt
  • 1 tablespoon, paprika
  • corn taco shells
  • Fresh Salsa, recipe below
  • Feta Cheese
  • Limes, garnish

On a small plate, mix together all the spices. Coat salmon with spice mix. Place the salmon on a cookie sheet and broil for 5 to 8 minutes or completely cooked through.

Add fresh salsa, salmon and feta cheese to a corn taco shell. Garnish with cilantro and lime!

Fresh Salsa, mix it all together and taste for seasoning! 

  • 4 or 5 roma tomatoes, chopped
  • 1/2 red onion, minced
  • 2 scallions, sliced thinly
  • 1 jalapeno, corred, seeded and minced
  • 1 garlic clove, minced
  • i handful cilantro, chopped
  • 1 tablespoon, olive oil
  • 1 to 2 teaspoons adobo sauce, from canned chipotles in adobo
  • 1 lime, juiced
  • salt and pepper to taste
