Lighter Steak Caesar Salad

Boring people talk about the weather… I’m really trying not to whine about the contrast in weather from the weekend. Deep breathes…I’ll leave it at that.

Despite the cold rain, last night was super relaxing. I’m always trying to make my home more of an oasis – a place I want to be to relax and feel comfortable. Last night on the sofa in bathrobe with dog at my feet and Anthony Bourdain on the tube – oh so good.  And, this easy lighter caesar salad with my Fresh Market $6 NY Strip Steak after the gym! I mixed romaine lettuce, grape tomatoes, cucumber and pan seared steak with good croutons and a homemade light caesar vinaigrette. Really quick and filling.

Make this salad – and consider your own oasis at home. It’s really hard to beat on days like today!

Lighter Caesar Dressing

Ingredients:

  • 1 clove garlic
  • 1/2 teaspoon anchovy paste
  • 1/2 teaspoon Dijon mustard
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • salt and pepper to taste

Assembly: Mince the garlic and mash together with anchovy paste. Add Dijon mustard. Whisk in the lemon juice  and slowly whisk in olive oil until emulsified. Season with salt and lots of pepper.
