I’ve been meaning to share this strange photo I took of mountain fresh eggs, chives, cream and chipotle peppers the other weekend. I quickly snapped if with my iPhone while cooking and was surprised by the turn out (amazing what a white bowl will do). I love the color contrast. This combination also turned out to be a delightful breakfast for friends in the mountains. I used leftover potatoes, chipotles and chives to put together breakfast burritos in the mountains. I whisked together chipotle peppers, chives, eggs, a splash of half-and-half, salt and pepper – and cooked them slowly until scrambled. I served them with onion and potato hash browns, sautéed chicken chorizo and whole wheat tortillas. A simple breakfast after a four mile walk with the dogs – with a great mountain view too.
Chicken chorizo?! I’m intrigued! Same flavor as the regular pork version? Will have to research that, because I love chorizo and eggs, but don’t love the grease.
Yes, I found it in the pre-cooked sausage section of the Harris Teeter! it is pretty good.
