The Phojito – It’s Just Like a Salad

I know I said last week that I’d share a couple of salad recipes for these extremely hot and humid days ahead but this cocktail is practically a salad and is certainly refreshing! We made these play-on-mojitos on Saturday night while I tested a couple hot dog recipes, fried some fresh zucchini from the market and roasted fresh Goat Lady CSA beets for a salad with stilton. We made these “Phojitos” using Thai Mint and Basil from the Super G Mart.  A couple of years ago I grew my own Thai Basil and it was extremely successful in a sunny spot – if you’re so interested.

Nothing says summer like a mojito and this was a nice change that paired well with the menu. Give it a try next time you’re enjoying the grill outside!

!Phojitos! 

  • 2 ounces – or so – rum
  • 12 Thai Mint and Basil leaves
  • 1 tbsp simple syrup
  • Lime Juice
  • 2 oz club soda
Muddle mint, basil and lime together. Add simple syrup, rum and top with club soda! Enjoy!
