You wouldn’t know that I’m not terribly crazy about roasted red peppers from the look of this blog. I personally find them a bit bland but others seem to be crazy about their mild notes. Michael Psilakis recommends this Roasted Red Pepper and Feta Spread to slather on lamb burgers and dip with pita bread. It is understated but tasty. If you like roasted red peppers, I advise you try it. Although I will be making tzatziki again next time. I like the extra kick!
Michael Psilakis’s Roasted Red Pepper & Feta Spread from How to Roast a Lamb
Ingredients:
- 1/2 sweet yellow onion
- 1 cup feta
- 2 roasted peppers, jarred or homemade
- 1 or 2 pepperoncini, sliced
- 1/2 teaspoon dry Greek oregano
- 2 pinches ground coriander
- 2 pinches ground cumin
- sprinkle of fresh parsley, chopped
- sprinkle of fresh dill, chopped
- 1 scallion chopped
- 1/2 teaspoon lemon zest
- olive oil
- salt and pepper
Assembly: Brush onion slices with olive oil, salt and pepper. Grill until charred and sweet. Add to a food processor with all the other ingredients. Process until smooth. Season with salt and pepper and add oil to loosen the mixture up if need be.
