I find one of the biggest challenges of entertaining is Friday night dinner. There is never enough time to prepare! Out of convenience, I planned a Catholic meatless Friday supper for our mountain weekend. I prepared a large Ina Garden Mac & Cheese topped with summer tomatoes a day in advance. We arrived in the mountains right on time for cocktail hour and only had to turn on the oven to reheat the dish for dinner. My ability for strategy roots from my Dad’s favorite phrase “proper planning prevents piss-poor performance.” Who knew it would be helpful in so many aspects of life?
And, great minds think alike, Jamey and Phil also prepared an Ina Garden Fennel and Tomato Salad. They were both delicious and perfect for a low-key Friday dinner in the highlands.
