If you’re a member of the Diet Tribe (remember that really bad Lifetime reality show this year) this is the recipe for you. This is a very light, healthy and nutritious salad that you can whip together in no time. I made this salad while we were in the Candied Bacon Test Kitchen on Sunday night. We were either going to skip eating all together or try to gain some nutrition. This was a perfect meal to start the week off right – and a great way to negate all the sugar covered bacon we consumed.
- 1/4 cup canola oil
- 1/ 4 cup rice wine vinegar
- 1/8 cup soy sauce
- 1 half teaspoon sugar
- minced basil and mint
Whisk together vinegar, soy sauce and sugar until dissolved. Whisk in oil until emulsified. Add mint and basil to taste.
- 1 head Romain lettuce, chopped
- 1 half english cucumber, pealed, seeds removed with a spoon and sliced thinly
- 1 handful carrots, sliced in slivers
- 2 to 3 scallions, chopped
- lightly salted peanuts
- chow mien noodles
- steak of your choice
- teriyaki sauce
Marinate steaks in teriyaki sauce for a couple hours (longer depending on the cut of meat). Grill the steaks to your liking – I prefer mine medium to medium rare. Combine all vegetables and top with peanuts, chow mien noodles and sliced steak. Toss with dressing.
