If the fact that okra is slimy comes as a surprise to you – you probably should skip this recipe. Most people have a love/hate relationship with okra and fortunately I love it.
- 6 cups fresh okra, cut and ends trimmed
- 2 cans diced tomatoes
- splash of red wine vinegar
- salt and pepper
Assembly: Throw everything in a pot and cook on medium until okra is soft (about 30 minutes or so). Salt and pepper to taste. It is that easy.
